When the nut turns yellow to light brown, it indicates the soft jelly like flesh has formed (exquisite flavour - mother nature at its best). After this stage, the flesh becomes hard and is either baked dry to produce copra or desiccated coconut. Coconut milk is widely used in cooking such as the traditional Tahitian Salad or the local 'lap lap' and other dishes. The milk is extracted by squeezing the rasped hard coconut flesh.
